World Cancer Day

So today is World Cancer Day.  

This morning, Lance Armstrong tweeted to his followers, "How has cancer affected you?"

Well, Leukemia took my grandfather's life, and other cancers have taken the lives of a number of people around me.  Three of my friends are battling the disease as we speak and luckily, several have beaten it including my lovely mother in law.  

I do not remember living in a world without cancer.  This perhaps is the deepest effect for me as I am not sure (although I have to believe) that I will see a world without cancer in my lifetime. Unless of course we continue to work together to help search for ways we can detect and prevent the disease from developing and ultimately find a cure.

To that end, I will again be participating in a 2-day cycling event called the Enbridge Ride to Conquer Cancer. I've agreed to raise at least $2,500, but I've set my personal goal to $5500, which is roughly what I raised last year as part of Team Mueller, which raised $50,000 altogether (that’s us at the end of the ride last year- yummy champers to boot).

Yummy Heart Sandwich Cookies

Yummy Heart Sandwich Cookies

  • 1/2c old fashioned rolled oats
  • 1c all purpose four + more for rolling
  • 1/3c whole wheat flour
  • 1/2t coarse salt
  • 3/4c unsalted butter @ room temp
  • 1/2c packed light brown sugar
  • 1/2t pure vanilla extract
  • 1/2c Nutella


Preheat oven to 350 degrees. Spread oats on a rimmed baking sheet; bake till golden – about 10 min. Transfer to a medium bowl; stir in flours and salt.  In a large bowl, using an electric mixer, beat butter and brown sugar on medium till fluffy.  Add vanilla; beat to combine. Scrape down bowl. Add oat mixture; beat until blended. Form dough into a disk, wrap in plastic, and refrigerate till firm (about 2 hours).

Preheat oven to 325degrees, with racks in upper and lower thirds.  On a lightly floured surface, roll dough 1/8” thick, dusting lightly with flour as needed. Cut out cookies with a 2” heart shaped cookie cutter; place 1/2” apart on two parchment-lined baking sheets. Bake until cookies are golden around edges. 12 to 15 minutes rotating sheets halfway through.  Let cool 5 minutes, then transfer cookies to a wire rack to cool completely. Repeat with remaining dough, chilling if too soft (reroll and cut scraps).

Spread Nutella on flat side of half the cookies, top with remaining cookies.

Store covered @ room temp for two days (or freeze immediately).

Makes 30 sandwiches.
